Pumpkin Delight

 

Ingredients:

1 15oz c pumpkin

2 sm pkg instant sugar free/ fat free vanilla pudding

2 c fat free cottage cheese

2 c light cool whip (95% fat free), thawed

½ tsp pumpkin pie spice

 

 

Directions:

Mix pudding, pumpkin and cottage cheese together.

Whisk in pumpkin pie spice.

Chill. Serve with cool whip as topping.

 

8 – 10 servings, 1 serving = 1 VLP

Low Carb Quick Chocolate Almond Ice Cream

 

Ingredients:

2 tbsp sliced almonds

1 c heavy cream

½ c sugar substitute (Splenda recommended)

1 tsp no sugar added vanilla extract

1/8 tsp no sugar added almond extract

1 tbsp unsweetened cocoa powder

2 tbsp whole milk ricotta cheese

 

 

Directions:

Preheat oven to 350 degrees F.

Spread almonds out on a sheet pan and bake for 5-7 minutes until just golden brown. (Watch them carefully as they

Great alternative side dish for Thanksgiving!!

 

 

“Mock” Garlic Mashed Potatoes

 

Ingredients:

1 medium head cauliflower

1 tbsp 1/3 fat cream cheese, softened

¼ c grated reduced fat Parmesan cheese

½ tsp minced garlic

1/8 tsp straight chicken base or bullion

1/8 tsp freshly ground black pepper

½ tsp chopped fresh or dry chives, for garnish

3 tbsp “I Can’t Believe it’s not Butter”
